I LOVE mangoes. Love them! Then I wrote a post on some of my favorite mango recipes, Indian style. And when my husband came home with a big bunch of super sweet mangoes, I had a sudden hankering for mango salsa.
But I wanted something more healthy than chips to eat with it. I was initially thinking of quinoa, but I spotted Trader Joe’s harvest blend in my pantry. The blend is a mix of Israeli Couscous, Orzo, Baby Garbanzo beans, and Red Quinoa (the couscous made up 90% of the bulk).
It was super simple to cook the grains in water for 10 minutes. I cut up mangoes, tomatoes, red onions, and cilantro and seasoned it with some salt, pepper, and lime juice. Scooped it along with the grains and – viola! A most yummy impromptu dinner recipe!
We ate the grains hot because we were hungry, but it would work good cold too! And I think this would be a picnic favorite.
